Cookie Tray: BEST OF BOTH WORLDS

Hello wonderful people! So today Jess and I worked hard in the kitchen to put together a cute cookie tray for a birthday celebration. We decided to make two creations from our grandma’s secret recipe book( not VEGAN) and then transformed one of her recipes vegan! We are so excited to share the recipe we can up with.. Introducing our vegan twist on vegan Molasses powder puff Cookies! Super yummy, and  perfect for the winter season! Pictures and recipe details below!

Ingredients:1 tbsp flax+3 tbsp of water= 1 egg 1/2 cup of cold coffee 1/2 cup of sugar2 tsp baking soda 1/3 cup Earth balance 1 tbsp of vinegar
1/2 molasses 1 tsp cinnamon 1/4 tsp cloves 1/4 tsp ginger3 cups of white unbleached flour ( you can use a little more if needed)


Directions:

Oven on 425 degrees. Cookies will be in the oven for 10-12 minutes.

Cream earth balance sugar together. Then add all wet ingredients together. Add the dry ingredients. The batter will be a tad sticky, so we suggest putting in the freezer for about 15-30 min. Take the dough out and role into balls about a quarter size in diameter( should be the size of a small ping pong ball).  Roll in powdered sugar. Pop in oven for about 10-12 minutes or so. Let cool and enjoy!! Great paired with a warm cup of hot cocoa or coffee by the fire with friends and family!!
