To make the Marinara Kale stuffing:
In a large sauce pan add 1 tablespoon of olive oil and 1/2 chopped white onion. Let cook on low heat for 10 minutes.
Next add two cloves of garlic finely chopped and let simmer on low for another 3 minutes!
Then add a 28 ounce can of crushed San Marzano to a blender. Blend until smooth.
Add that to the large pot with the onion and garlic.
Then add 1/4 cup of finely chopped fresh oregano to the pot.
Let simmer for 2 hours on low heat.
Then add 1/2 cup of julienned Kale and 1 tablespoon of salt and pepper into the pan.
Stir and let sit for another 5 minutes!
Set aside.
Then the oven on to 350 degrees.
Half a acorn squash with a large knife and spoon out the seeds.
Brush each side with olive oil, pepper, and salt.
Place face down on a baking sheet and set into oven. Let cook for 30 minutes.
Take out and pour the marinara stuffing sauce into each acorn squash half.
Cook for another 25 minutes!
Take out and sprinkle fresh Basil and more julienned Kale on top!
Garnish with crushed red pepper flakes and a little lemon juice!
