These bites are absolutely divine! They are mini cakes in the form of cookies! Made with PBfit, they have lots of good protein as well as being a fun dessert or breakfast bite! We made two versions! The first are drizzled with black strap molasses and sprinkled with almonds! The second batch are plan, sprinkled with crystal sugars! We hope you all enjoy these little sweet treats!!
Ingredients: 1/2 cup of applesauce 1/2 cup raw white sugar 1/2 cup of packed brown sugar 1/2 cup PBfit 2 tbsp of flax 1 1/2 tbsp of water 2 cups unbleached flour 4 tsp of baking soda 1/2 tsp of baking powder 1/4 tsp salt Toppings: black strap molasses Sugar crystals( sprinkles) sliced almonds Directions: mix all wet ingredients together first. Then mix dry ingredients in a seperate bowl. Add two together and let cool in the freezer for 2-3 hrs. After, spoon good size amounts onto parchment paper. Leave in 10-13 minutes! on 375. For the crystallized sugar option, sprinkle the sugar before you put in the oven. If you want the black strap molasses/almond cookie option: wait till cookies cool then drizzle the molasses, top with sliced almonds, then add more black strap! ENJOY!!
