Baking vegan cupcakes and cakes can be difficult without the fluffiness that comes with using butter and eggs. We have made some really airy and fluffy cupcakes that are to die for!! Super easy and a lot of fun, here is the recipe! hope you guys enjoy. HAPPY eating!!
Ingredients: 1 cup coconut milk 3/4 raw sugar 1/3 cup of apple sauce 1 1/2 tsp of apple cider vingar 1 tsp vanilla 1 tsp of chocolate extract 1 cup unbleached flour 1/3 cup of cocoa 2/4 tsp baking soda 1/2 tsp of baking powder 1/4 tsp of salt 1 tbsp of instant espresso 1/3 cup of Enjoylife mini chocolate chips! (can always add more) Preheat the oven 350 degrees Directions: Mix all wet ingredients together well. Next combine all dry ingredients and then add to the wet ingredients. Don't over mix. The mixture should be pretty soupy. No worries this makes the cupcakes very fluffy!! Use an ice cream scooper to scoop even amounts into your cupcake tins. I lined each tin with parchment cupcake liners! Pop in the oven for around 20-25 min! This time may vary depending on your oven! The toothpick method will gurrentee your cupcakes are baked all the way through! The tops should bounce back easily! Happy Baking babes. xo,,..
