Vegan two layered pound cake. Filled with fresh strawberries and topped with a sweet almond glaze
Pound Cake Ingredients:
3/4 tsp of baking powder
1/4 tsp of baking soda
3 tsp of pound cake extract
1 1/2 cup of unbleached flour
1 cup of applesauce
4tbsp of flaxmeal+ 10 tbsp of water
1 1/3 cup of sugar
1/4 tsp of salt
Mix all dry ingredients and set aside. Then in separate bowl combine wet ingredients.
Combine wet and dry ingredients. Pour into two round cake tins.( make sure to spray
with non stick spray!) Preheat the oven to 350. Cakes should take around 30-40 min
depending on the oven. Keep a close eye! Look for slightly golden tops and use a toothpick
to check the middle of the cake! Take out and let cool for 10-25 min. Set out first cake, layer
strawberries starting from the outside in. ( I sliced them thin, which I recommend). Next take your second
cake out and layer on top. NEXT, time to make the glaze!
1/2 cup of powdered sugar
1/3 cup of vegan cream cheese(thawed)
1 tsp of almond extract
I used coconut milk but you can use whatever milk you’d like! you want to ease the amount of milk
in. You want the consistency of your glaze to be thin but still hold well. So mix with a whisk untill
you get the consistency you like!
Pour over the cake and spread out. Then top with strawberries!
