Warm citrus farro tossed with kale, cucumber, dried cherries and toasted walnuts! Check below for the recipe details babes:
Ingredients:
Juice of 1 orange
Juice of 1 lemon
2 tbsp of olive oil
1/2 a cucumber
1/2 of walnuts
1/4 cup of dried cherries
1/2 cup of farro
Whisk together in a large bowl. Next take 6 leaves of kale strip the leaves from the stalk. Rip into medium sized pieces and put in bowl with dressing
Directions:
Half a cup of farro in boiling water and cook for 25 minutes on simmer, drain and add the farro to the kale and dressing. Chop up 1 cucumber into small pieces add to bowl. Toast 1/2 cup of walnuts and add to mixture and 1/4 cup of dried cherries!! We topped this mixture over a bed of mixed greens. It would also make a great side dish to any fish or meat; for those of you who are vegan or vegetarian, it would be delicious on a veggie burger or black bean burger! It may even be a great idea to add in some cooked tofu! This dish is magnificent and super delicious.
