VEGAN Maple Spiced Cake

Maple Spiced Cake with a Sweet Potato Custard filling topped with a Vegan Cream Cheese frosting

*preheat the oven 350 degrees.

Ingredients for sweet potato custard filling:
2 sweet potatoes peeled, boiled, and mixed until creamy
1/3 cup of sugar
2 tbsp of cornstarch
Pinch of nutmeg
3 tbsp of coconut oil
1 tsp of vanilla extract
1/4 tsp of salt
2 cups of almond milk

Maple Spiced Cake ingredients:
2 1/3 cups of unbleached flour
1 tsp baking powder
1 1/2 tsp of baking soda
1 tsp of cinnamon
1/2 tsp of nutmeg
1/2 tsp of all spice
1/4 tsp of cloves
1/2 tsp of maple extract
1 1/2 cup of sugar
6 tbsp of flax meal + 3/4 cup of warm water
1/2 tsp of salt
3 cups of unsweetened apple sauce

FROSTING
2 cups of powdered sugar
3/4 tsp of apple cider vinegar
1/4 tsp of almond extract
1/4 tsp of clear vanilla extract
2 tbsp of almond milk (add more if necessary)

DIRECTIONS:
To make the custard use a sauce pan and put the cornstarch and sugar in. Whisk. Add your smoothed mashed sweet potatoes and milk and whisk on medium heat until lumps are gone. Take off heat and add in vanilla, oil, and nutmeg. Set aside to cool.
For the cake add all dry ingredients. Set aside. Mix the flax meal and water mixture with the sugar and apple sauce. Add wet to dry ingredients and mix well. Pour into two round baking pans. Half and half. Place in oven for 18-20 min.
Let cool.
Mix all ingredients to make the frosting set aside.
Place the sweet potato custard on top one of the cakes. Place the next cake on top and press down gently. Pour frosting over top and smooth out. Refrigerate for 10-15 min then serve. I topped it all with a bit of brown sugar for a little sparkle!
