Raspberry Rainbow Pepper Salad with pistachios dressed with a Chipotle “ranch” with orange zest
Directions:
1 stalk of romaine lettuce chopped into whatever size you prefer. This is the base of your salad. Chop an assortment of rainbow peppers( this includes red, yellow, and orange peppers). We love getting the assortment prepackaged from HEB. Next, top with some purple cabbage and fresh raspberries. For a crunch you can add what ever kind of nuts you like, we loved pistachios on this salad!
Chipotle “ranch” Dressing ingredients:
2 tablespoons of Greek yogurt
1 teaspoon soy sauce
1/2 teaspoon of orange zest
1/4 teaspoon cayenne pepper
1/4 teaspoon agave nectar
1 can of chipotle peppers
1/2 teaspoon canned minced garlic
Blend until smooth. Drizzle over salad or keep on the side. Regardless the dressing is to die for! ENJOY.
